Vinification
Plot selection. Fermentation at controlled temperature.
Long maceration,
from 2 to 3 weeks, to get an optimal extraction of aromas and polyphenols. After malolactic fermentation, 40 % of the wine is aged in American (70%) and French (30%) oak barrel for 6 months
