  • Colour : Deep ruby red.
  • Nose : Quintessence of blackberry and plum aromas, evolving towards gourmet notes of cocoa.
  • Palate : Smooth, complex and well-structured body. A lot of character with seductive prune and ripe fruits flavors, sustained by fine notes of spices and soft tannins, with cocoa bean and mocha notes.
  • Food paring : Serve at 16°C, with grilled or roasted, pasta dishes, cured meats, black pudding and apples from Vigan.…

The vineyard

  • Soil type : Clay and Limestone, pebbly terraces
  • Age of the vineyard : 18 to 30 years old
  • Pruning : Cordon de Royat
  • Harvest : Mechanical
  • Average yield : 35 to 55 hl/ha
  • Density of planting : 4000-4400
  • Elevation : 70-90m
  • Climate : Mediterranean

Vinification

Plot selection. Fermentation at controlled temperature.
Long maceration,
from 2 to 3 weeks, to get an optimal extraction of aromas and polyphenols. After malolactic fermentation, 40 % of the wine is aged in American (70%) and French (30%) oak barrel for 6 months
