- Syrah : 25 to 30 year-old vines producing 42 hl/ha
- Grenache : 44 year-old vines producing 37 hl/ha
- Carignan : 51 year-old vines producing 42 hl/ha
- Pruning : Cordon de Royat
- Harvest : Hand harvesting
- Density of planting : 4400-5000
- Elevation : 70-90m
- Climate : Mediterranean
Wine Making
At the reception, the grapes are sorted on a selection table. Traditional winemaking for Grenache, with daily racking or pumping overs. Maceration between 2 and 4 weeks. Carbonic maceration for Syrah and Carignan with entire bunches (15-18 days). The rest of the blend goes through normal maceration for 3 to 4 weeks.
Oak barrel ageing (45% of the wine) for 8 months. 2/3 US and 1/3 French oak barrels. The 55% remaining are aged in vats
